Produced in tiny quantities, ‘Carato’ is a traditional Vernaccia di San Gimignano fermented and aged in neutral barrique and then aged further in bottle before release, unlike most modern Vernaccia which sees little to no oak. The 2020 Vernaccia di San Gimignano Carato is a selection aged in oak. Wood imparts a range of more oxidative flavors such as caramel, spice and dried flowers that, in my view, don't work especially well. I also find a touch of volatility that is distracting.
